Instructions to make Fried rice and salad with sauced fried turkey and mackerel fish:
  1. Wash anf Boil your turkey and season with salt,pepper, onions,seasoning cubes
  2. Wash the fish and season with salt,seasoning cubes and pepper
  3. Fry both the turkey and fish till golden brown
  4. Roughly blend both the pepper and tomatoes
  5. Put a clean pot on fire,when it is hot add in your vegetable oil. Allow it to get hot for like 1 minutes and add in your diced onions and blended tomato mix and stir fry for about 5 minutes
  6. Add in your seasoning cubes,onions and a little of the turkey stock..alloe it to boil for about 10 minutes
  7. Add it your fried turkey and mackerel fish and stir..allow to boil for 8minutes then it's ready
  8. Wash your rice thoroughly with salt then put in a clean pot adding salt,seasoning cubes,curry,garlic powder and allow it to boil adding appropriate water and the reserved turkey stock that would dry up once it's done
  9. Wash all the vegetables. - Dice the spring onions & set aside ; Peel the carrots & cut into small cubes. Remove the seeds of the green bell peppers & cut into small cubes.
  10. Wash and place the cow liver in a pot, add seasoning cube and salt to taste; Cook the liver for 10 minutes, then when cooled, cut into cubes and set aside. - Liver can also be fried, before cutting into cubes.
  11. Heat up the vegetable oil; add the carrots, peas, green bell pepper and diced liver/meat; then add a little white/black pepper, a garlic, curry &seasoning cube to taste.. stir fry for 1 min and pour into a bowl.
  12. The Rice is going to be fried in small batches, so you’ll have to divide the stir-fried vegetables into equal portions. The size of your frying pan/wok will determine how many portions you will have.
  13. Pour a portion of the stir-fried mix into the frying pan; add the cooked rice and stir-fry for about 2 minutes.
  14. Do not overcrowd the pan, make sure there is a little space in the pan so that you can move the rice around the pan for even distribution of heat. - Repeat this process for the remaining rice and veggie mix.
  15. Wash your cucumber,cabbage,carrot thoroughly
  16. Diced the cabbage and wash with salt water.. dice the cucumber and carrot
  17. Add it all in a bowl pour in the sweet corn and green peas..
  18. Mix with your mayonnaise and it's all ready to be served

Heat a frying pan until hot, add the olive oil and the mackerel fillets, skin side down, and cook for two minutes until the flesh changes colour halfway up the fish. Toss the salad with a little of the dressing then place on top of the beetroot slices. Add the mackerel fillets then drizzle over more of the dressing.
